MY FAVORITE MEATLOAF

1/2 lb. ground beef
1/4 lb. ground lean pork
1/2 cup dry breadcrumbs
2/3 cup milk
1 egg, beaten
2 tbsp. minced onion
1/2 tsp. salt
1/8 tsp. each pepper, dry mustard, celery salt, and garlic salt
1 1/2 tsp. Worcestershire sauce

Heat oven to 350 degrees. Mix all ingredients thoroughly. Shape into 2 loaves in shallow baking pan. Spread with catsup or your favorite barbecue sauce. Bake 1 hour, until done.  This makes 4 servings.  Garnish with whipped cream if desired.

Our family loves this so I multiple the recipe by 4 and make 2 loaf pan size meatloaves. One for dinner and one for the freezer. It makes great sandwiches!

The recipe comes from Betty Crocker’s Dinner for Two, vintage 1964.

SWEDISH MEATBALLS – MOM’S FAVORITE

1 cup breadcrumbs
1 lb. ground beef
1 tsp. minced onion
1 tsp. salt
3 Tbsp. milk
dash each pepper, cloves, allspice
1/8 tsp. nutmeg
1 egg, beaten

Combine all ingredients. Roll into 1 1/2″ meatballs and brown. If used for Swedish meatballs, add 3 cups hot water after browning and simmer for 2 to 3 hours. Add a dash of nutmeg and 2 bouillon cubes to gravy.

These meatballs may be used for any type of meal.  For spaghetti, simmer in your favorite tomato sauce.
